Lunch Pancake


Yield: 1 or 2 servings

2 Eggs

4 Tbsp (60 ml) Valley Flax Flour (Golden or Brown)

4 Tbsp (60ml) Canned meat or fish

Salt and Pepper to taste

1 tsp (5 ml) Vegetable oil for the pan (optional)


1. In a small bowl, combine the eggs and flax flour.

2. Stir in the meat or fish; season with salt and pepper.

3. Pour the mixture into a hot frying pan. Fry until the bottom is set, then turn and continue cooking until cooked through.
